Ingredients
  

  • 1 medium apple (Honeycrisp, Fuji, or Gala work well), cored and diced
  • 1 cup plain Greek yogurt (2% or whole milk for creaminess; use dairy-free if preferred)
  • 1–2 teaspoons honey or maple syrup, to taste
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract (optional, but lovely)
  • 1–2 teaspoons water or a small pat of butter for cooking the apples
  • 2 tablespoons chopped nuts (walnuts, pecans, or almonds)
  • 1–2 tablespoons granola or toasted oats (optional for extra crunch)
  • Pinch of salt (optional, to enhance flavor)
  • Optional add-ins: raisins, chia seeds, hemp hearts, a dusting of nutmeg

Method
 

  1. Prep the apple: Wash, core, and dice the apple into small cubes. Smaller pieces soften faster and mix better with the yogurt.
  2. Cook the apple: Warm a small skillet over medium heat. Add water or a pat of butter, then the apples, cinnamon, and a tiny pinch of salt. Cook 3–5 minutes, stirring, until slightly soft and fragrant. For a faster option, microwave the apples with cinnamon and a splash of water for 60–90 seconds.
  3. Toast the nuts: In a dry pan over medium-low heat, toast nuts for 2–3 minutes until aromatic. This step adds big flavor for minimal effort.
  4. Sweeten the yogurt: In a bowl, stir the yogurt with honey or maple syrup and vanilla. Taste and adjust sweetness to your liking.
  5. Assemble: Spoon the warm apples over the yogurt. Add toasted nuts, granola if using, and an extra pinch of cinnamon. Drizzle with a touch more honey if you want a dessert-like finish.
  6. Serve: Enjoy right away while the apples are still warm and the yogurt is cool and creamy.
