Tomato Basil Crockpot Chicken - Cozy, Flavorful, and Effortless

Ingredients
  

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 (14.5-ounce) can crushed tomatoes or tomato sauce
  • 1 (14.5-ounce) can diced tomatoes (fire-roasted if you like a smoky note)
  • 3–4 cloves garlic, minced
  • 1 small yellow onion, finely chopped
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup heavy cream or half-and-half (see variations for dairy-free)
  • 1/3 cup grated Parmesan cheese, plus more for serving
  • 1–2 tablespoons tomato paste (optional, for richer tomato flavor)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional for heat)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1/2 cup fresh basil leaves, chopped (plus extra for garnish)

Method
 

  1. Lightly grease the crockpot with a little olive oil or cooking spray. Place the chicken in an even layer on the bottom. Season both sides with salt and pepper.
  2. In a medium bowl, combine the crushed tomatoes, diced tomatoes, tomato paste (if using), chicken broth, onion, garlic, dried basil, dried oregano, red pepper flakes, olive oil, and a pinch of salt. Stir well.
  3. Pour the tomato mixture over the chicken, ensuring it’s mostly covered. Cover and cook on Low for 4–6 hours or High for 2.5–3.5 hours, until the chicken is tender and easily shreds with a fork.
  4. About 20 minutes before serving, stir in the heavy cream (or half-and-half) and Parmesan. Add the chopped fresh basil. Taste and adjust salt and pepper.
  5. If you want a thicker sauce, remove the lid for the last 15–20 minutes to reduce slightly, or stir in 1–2 teaspoons of cornstarch mixed with 1 tablespoon of cold water and cook until thickened.
  6. Shred the chicken in the pot or leave it in larger pieces, depending on your preference. Stir to coat in sauce.
  7. Serve over pasta, rice, polenta, mashed potatoes, or zucchini noodles. Garnish with extra fresh basil and more Parmesan.
